Resumen

The objective of the present work was to compare the carcass parameters and commercial yields (% of boxed veal) of 92 male calves from the following genotypes: Tudanca, Limousin, Asturiana de la Montaña and Tudanca x Charolais cross. Calves naturally suckled their mothers in mountain pastures while they also had free access to concentrate (not the cows). Calves were slaughtered at an average of 8 months, when they reached an adequate degree of fat cover. The results showed that calf production up to a similar carcass fatness degree provides an adequate carcass yield in terms of % of boxed veal in all studied genotypes, and values were directly related to carcass conformation. Limousin calves provided the best carcass and meat yields while Tudanca calves provided the lowest. Intermediate values were reached by Asturiana de la Montaña and Tudanca x Charolais cross. In general, carcasses from all genotypes were positively evaluated within the commercialization chain.
