Resumen
THC is a natural antioxidant which was incorporated into the film forming solutions of lactose crosslinked gelatin films in order to analyze the effect of the reaction and the addition of the bioactive in the antioxidant capacity of gelatin films. Since phenolic compounds are formed during chemical crosslinking of gelatin film, they showed higher antioxidant capacity (88.5 %) than films prepared without lactose (84.5 %). Furthermore, morphological changes were observed in both surfaces of gelatin films due to THC agglomeration and crosslinking, leading to less glossy and rougher surfaces.
