Resum

This article describes the Food Trend Trotters initiative of the AZTI-Tecnalia Food Research Centre and Trend Trotters, which uses travel to generate innovation in the field of scientific research and improve the dissemination of scientific achievements. The text offers some experience-based reflections on food surveillance and communication.
