This study was designed to compare the carcass characteristics and nutritional quality of veal produced from ''Asturiana de los Valles'' (AV, n=7), ''Tudanca'' (TUD, n=6), and ''Tudanca x Limousin'' cross (TUDxLIMU, n=6) genotypes when allowed to feed freely on mountain pastures naturally suckling their mothers from birth to 6-7 months of age. While weaning, calves also had free access to concentrate. After weaning, calves were fed indoors ad libitum grass hay and concentrate. Beef obtained from AV genotype was the leanest but the fatty acid (FA) profile of backfat was different compared to the other two genotypes, especially in terms of the trans-18:1 and CLA isomeric profile. Overall, beef obtained from TUD genotype was the healthiest in terms of the nutritionally interesting FAs that had an intermediate muscle fat content.
